Well, I survived the weekend sans bread, rice or pasta. But I think it's only because my husband and I discovered the delightfulness of flaxseed meal pancakes.
The photo above shows our first pancake ready to be flipped in the pan. Admittedly, I was skeptical. It looked too...healthy. And un-pancakey. But once it was cooked through, we slid it onto the plate, spread just a teeny bit of I Can't Believe It's Not Butter on it, and tried a bite.
Not bad!
It had a certain heartiness to it that you don't find in a plain buttermilk pancake, and it satisfied my craving for something bready. This is definitely one breakfast food that might be a keeper!
